Ascomycota, Saccharomycotina, Saccharomycodales, Saccharomycodaceae. Genus: HANSENIASPORA
Hanseniaspora uvarum (Niehaus) Shehata et al. ex M.Th Smith
Common synonyms
Kloeckera apiculata (Reess) Janke.
Latest update: 8 November 2024
Colony characteristics
Colonies (YPG, 2 d, 25°C) white to creamy, smooth, glossy, slightly raised at the centre.
Microscopy
RG-1, BSL-1. Budding cells bipolar, initially spherical to ovoidal or elongate, 2.5-11.5 × 1.5-5 µm, later becoming somewhat saturnoid due to formation of short annellated zones at the poles, singly or in pairs. Poorly developed, branched pseudohyphae may be present. Homothallic. One or two warty, spherical ascospores per ascus, each with an equatorial or subequatorial ledge. Ascospores usually not released from the ascus.
Pathogenicity
RG-1, BSL-1. Jankowski et al. (2018) described a hand dermatitis and Ehrlich-Fein & Patel (2024) a chronic onychomycosis, both in immunocompetent individuals.
One Health
The species resides abundantly as an early fermenter of fruits, strawberries, grapes, juices, spoiled figs and similar habitats (Pitt & Hocking, 2009) and can also be found in soil and surface water (Kurtzman et al., 2011). It is extremely acidotolerant and secretes pectinases for the degradation of plant biomaterial. The species is applied in cider making using fruit juices with high glucose content. It is also used for co-fermatation with Saccharomyces cerevisiae in wine production (Tristezza et al., 2016).
